I love happy accidents. I just happened to pick up a bunch of asparagus at the grocery store, and then happened upon this awesome recipe for shaved asparagus salad. I paired it with chicken breasts thinly sliced that were marinated and basted with Apple Butter Barbecue Sauce, some spicy saffron rice, and a Veritas Viognier. End result? JGL thought it was one of our best dinners to date–not bad for official Staycation Day One!
